Raw beet Juice

INGREDIENTS
– 2 cups of organic beets
– 1 organic apple
– ½ root of ginger and 1 root of curcuma

Steps:

  1. Add all the ingredients to the juice extractor and press until you get the juice out of it
  2. Enjoy immediately
    You can keep this in the fridge up to 24 hours safely.

“Ilera” Immune boosting Kale Juice

INGREDIENTS
– 2 cups of organic kale
– 1 organic apple
– ½ root of ginger

Steps:

  1. Add all the ingredients to the juice extractor and press until you get the juice out of it

SWEET RECIPES

Raw Yule Log

Equipment: Food processor, blender, spatula, measuring cups, parchment paper, sharp knife, cutting board, rolling pin, tweezers (optional)
Serving size : 4-5 people

Ingredients:

The base:

  • ¾ cup raw almonds, soaked and dehydrated
  • 10-15 Medjool pitted dates
  • 2 tbsp cacao powder
  • 1 tbsp organic almond flour
  • 2 tbsp agave nectar
  • ¼ tsp sea salt

Instructions:

  1. Pulse the almonds in a food processor until chunky.
  2. Add the dates, cacao powder and pulse again. If you add 10 dates and the mixture is not sticky enough, add the 5 dates.
  3. Add the remaining ingredients of the base
  4. Line a cutting board with a parchment paper and put the base recipe on it. Cover with another parchment paper
  5. Using the rolling pin, make up and down movements to flatten the base (be careful not to make it too thin or else it will break when rolling later). Using a knife, cut the edges to make a square shape

Ingredients:

The vanilla cream filling:

  • 1 cup raw cashews, soaked and dehydrated
  • ¼ cup almond milk
  • 2 tbsp agave nectar
  • 2 tbsp filtered water
  • 2 tbsp agave nectar
  • 5 drops vanilla drops, non alcoholic
  • 3 drops liquid stevia, non alcoholic (optional)
  • 1/4 tsp sea salt
    —————-
    1 tbsp melted coconut oil

Instructions:

  1. Add all the ingredients of the vanilla cream to the blender EXCEPT the coconut oil.
  2. Add the coconut oil and blend again until smooth.
  3. Pour the vanilla layer on top of the base layer
  4. Roll carefully like a swiss roll
  5. Put in the freezer for 1 hr before serving

Storage:
Store in the fridge for 1 week or in the freezer for 2 weeks.

RAW MANGO CRUMBLE RECIPE

Equipment: Food processor, high-speed blender, bowl, spatula

Ingredients:

Mango smoothie:

  • 1 cup mango (frozen)
  • ¾ cup coconut milk (obtained from blending 2 cups water and 1 cup desiccated coconut)
  • 3 pitted organic dates

Citrus crumble:

  • ¼ cup almonds

  • 2/3 cup walnuts
  • 2 tbsp powdered lakanto or coconut sugar
  • 5 drops non-alcoholic vanilla extract
  • 1/8 tsp Himalayan salt
  • 1 tbsp melted coconut butter or coconut oil (optional)

  • 1tbsp orange juice

—————————

  • ¾ cup raw Apricots

—————————

  • 2 tbsp shredded coconut

 

Instructions:

Mango smoothie

1. Blend all ingredients in a high-speed blender until smooth

Citrus crumble

  1. Process the almonds until you get a chunky texture
    2. Add the walnuts, lakanto and salt and process again for few seconds (do not overprocess as we still want to see the texture looking like a crumble)
    3. Pour into a mixing bowl. Add the coconut butter, the vanilla extract and mix well using your spatula
    4. Add the orange juice and mix well again with the spatula

Assembling
1. Pour the mango smoothie into a small bowl until it is ¾ filled.
2. Add about half of the crumble mixture in the middle of the bowl
3. Add the Apricot (pre-cut into fine slices) on top of the crumble
4. Add the remaining crumble on top of the apricot
5. Sprinkle with the shredded coconut
6. Decorate with oranges or any citrus of your choice (pre-cut into thin slices)
7. Refrigerate for 20 minutes before serving

Ilera raw smoothie

INGREDIENTS
–  1 large organic mango or pineapple
– 1 cup of organic blueberries
– 1 cup of raw almond milk (home made)
– ½ ginger root
– 1 cup of mix of fresh chopped mango and 1 strawberry

Steps:

  1. Blend all the ingredients (except the cup of fresh chopped mango and strawberries)
  2. Add to a cup
  3. Add the cup of fresh chopped mango and bluberries
  4. Decorate with the only 1 strawberry
  5. Enjoy

Spinach smoothie bowl

INGREDIENTS
–  1 large organic mango
– 1 cup of organic kale
– 1 cup of raw almond milk (home made)
– ½ ginger root
– 1 cup of organic trail mix

Steps:

  1. Blend all the ingredients (except the trail mix) in a blender)
  2. Add to a bowl
  3. Sprinkle the trail mix on top (or nuts of your choice)

Enjoy

Mango sorbet

INGREDIENTS
– 2 cups of frozen sorbet
– ½ cup of organic cherries
– 2 tbsps of agave nectar (optional)

Steps:

  1. Add the frozen mango sorbet to the food processor (with the agave nectar if needed) until you obtain a creamy texture.
  2. Decorate with the cherries as needed. You may want to remove the seeds first.
  3. Enjoy immediately before it melts.

SAVORY RECIPES

Pineapple salad

INGREDIENTS
– 1 large organic pineapple
– 1 cup of organic grape
– 1 cup of cherry tomatoes
– 1 cup of romaine lettuce
– 2 tbsps of organic olive oil
– 1 pinch of Himalayan sea salt

Steps:

  1. Cut the pineapple into 2 and remove the content of one half and put it aside.
  2. All all the other ingredients to a bowl and mix together
  3. Pour the content of the bowl into the half pineapple
  4. Enjoy
    You can use the remaining pineapple as a fruit salad.
Avocado salad
